How to Make Muffins

Are you cringing at the thought of making muffins?  Do they sound like something only a real cook could make? Take heart! There are alternatives. You can easily buy a box of muffin mix, follow the directions, and your muffins will turn out delicious.  Or, you can follow this easy recipe on how to make muffins.  Let’s make some corn muffins!

What’s You’ll Need
Muffin Pan (holds 8 muffins)
Large Bowl
Medium Bowl
Wire Rack
Large Spoon
Large Plate

Ingredients
1 cup flour
½ cup sugar
1 tablespoon baking powder
1-1/2 cups milk
1-1/2 cups cornmeal
1-1/2 sticks of butter
2 eggs

Preparation
Preheat over to 400 degrees.  Butter the muffin pan.

Take the large bowl and add the cornmeal, flour, sugar, baking powder and salt. Mix well.

In the medium bowl add the milk, butter and eggs and mix well.

Add the ingredients from the medium bowl into the large bowl.  Stir until moist and smooth.

Spoon the batter into each of the muffin holes in the pan.  Bake approximately 15 minutes or until muffins are golden brown.  Take the pan out of the oven and place the pan on the wire rack. Let the pan cool down for 5 minutes.  Take the muffins out of the pan and let them cool thoroughly.

After the muffins have cooled, place them on a decorative plate.  Oh, go ahead, have one. You deserve it. After all, you have just made corn muffins from scratch, and they turned out great.  Pat yourself on the back. 

You can serve these muffins for breakfast with a bit of butter, jam or honey. 
You can have them as an afternoon or evening snack.  Or you can serve them as a side dish with something spicy like tortilla soup or chili. They will warm up quickly in the microwave.  You are on your way to making blueberry, apple, or chocolate chip muffins.
