- Choose a chocolate bar. It is best to not use white chocolate as it is softer and harder to create nice curls
- Chocolate should be room temperature or slightly warmer. Start with room temperature and if the chocolate is too brittle and the curls are not forming properly try placing it in the microwave for 5-7 seconds.
- Using a vegetable peeler with a swivel blade, slowly run the peeler along the chocolate bar allowing a curl to form and gently fall onto a plate.
- Use immediately or place in the refrigerator. Use care while handling curls as they are fragile and will quickly melt.
